DAY FOUR: COOKING CLASS IN CHIANG MAI

For our first full day in Chiang Mai, we arranged a cooking class with A Lot of Thai.  This company came highly recommended, with small class sizes and an English-speaking teacher.  We made three total dishes: papaya salad (a cold, spicy salad), pad thai, and panang curry.  The meals were delicious!  In fact, Paul still regards this as his favorite meal throughout the whole trip... Compliments to the chef!
 


We loved the instructor, Yui, who taught the class on the patio of her home.  Yui was so sweet and we quickly connected, as she had traveled to Portland before and loved the NW food scene.


 At the end of the course, we rode in a vintage VW van to the local marketplace.  There, Yui showed us the ingredients we had used in the class and how to select the best produce.  Without a single tourist in sight, it was a great glimpse into local Thai life.

What's Next?

The couple just returned from a fabulous trip throughout Thailand and Cambodia. While nothing is "set in stone", they are planning their next adventure for 2016.
